Banana Muffins


A while back there was a great freebie for a 2 lb bag of King Arthur flour. My flour arrived and has since been used but since then, they have been sending me a very interesting catalog full of kitchen tools. The last booklet had a yummy sounding recipe in it for Banana Muffins. I'm generally not a fan of banana flavored foods but these looked and sounded delicious. I tried them out and they were a winner!

BANANA MUFFINS

1/2 cup plain yogurt
1 egg
1/4 vegetable oil
1 1/2 cups mashed bananas
3/4 cup granulated sugar
1 cup oat bran
1 1/2 cups white flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp nutmeg

TOPPING

1/4 cup brown sugar
1/4 cup roller oats
2 tbsp flour
1/4 tsp cinnamon
1 tbsp butter

Preheat oven to 375

Mix muffin ingredients and fill 12 muffins cups (or greased tin) until nearly full (they won't rise much).
Prepare topping and sprinkle over muffins
Bake for 20-24 minutes
