Strawberries have been on sale this week for $1/container and I found this simple recipe in a magazine this week, so I decided to make some jam.

2 containers strawberries (hulled and sliced)
4 Tbsp lemon juice
4 Tbsp powdered pectin
1 tsp butter
2 1/2 cups sugar (could reduce to 2 cups - the jam is a little on the sweet side)
Combine the berries, lemon juice, butter, and pectin in a large saucepan. Mash and stir with potato masher. Let it boil for one minute.
Add the sugar and bring to a boil again, allow to boil for another two minutes.

Take off the heat and let it sit for 15 minutes to cool slightly. Pour into jars or freezer containers. Cover and refrigerate until jam is set and cold, about 8 hours. (Jam will thicken as it chills.)

This will keep in the fridge for 3 weeks or the freezer for one year.
